Fazenda Pantano is located close to the city of Patos de Minas, owned by Mauro Galheri and his family. The farm sits in the Cerrado, a vast tropical Savanna which covers 20% of Brazil. Over half of Mauro's farm is left as permanent natural forest reserves, a legal requirement, with the rest being used to grow coffee. This is an incredibly small experimental lot, consisting of only 12 bags. Mature coffee cherries were hermetically fermented before being natural processed; as the fermentation process progresses in the sealed container, oxygen is depleted by bacteria, creating an anaerobic environment. Under these conditions, the bacteria produce a unique series of acids, which has led to this distinctive and boozy profile. The flowery, sweet aroma of Riesling hits on the nose. This transcends into the cup, lending a delicate white grape sweetness. The boozy notes continue in the form of black cherry liqueur, adding a balancing acidity to the cup. Concluded the cup is a creamy, mouth-filling sensation of white chocolate nougat. Extremely well structured and balanced, it makes for a moreish brew.
