This is our second washed Ethiopian of 2019, and we're very excited to share it with you. Established in 2014, the Halu Beriti Washing Station serves 750 smallholder producers who live in the surrounding area. Each smallholder farm is tiny in size, between 1/8ha and 1/2ha in size.  This lot from the Halu Beriti washing station is a Special Preparation. The green coffee is futher hand-sorted in between it's initial soak and it's 1st fermentation. There is then a 2nd fermentation stage. Meanwhile, the coffee is constantly sorted throughout fermentations and drying to remove any green beans drying unevenly or showing signs of damage. This meticulous processing is definitely apparent, creating a coffee which is incredibly clean and balanced. Heady notes  of peach and apricot on the nose follow willingly into the cup, bringing with it a clean stone-fruit sweetness. A delicate cirus acidity balances the cup. A lingering wave of sweet, floral notes like jasmine and tea rose to finish.
