The area of Gualme, where El Mandarino is situated, is renowned for its great growing conditions. Jesus operates an organic operation, with his crop being grown in a 4ha area underneath natural forest. What makes this coffee and its profile truly unique is the 72h maceration of the coffee cherry during the process. Carbonic maceration is the process of fermenting whole coffee cherries in an anaerobic (oxygen free) environment, causing the sugars present to be broken down into acids. This results in a complex cup that makes you think about the flavour with every sip. Full of cherry sweetness, boozy notes of rum and a sparkling cola quality. This is one of the funkiest coffees we've ever drunk.
