PROCESSING

This lot from Andres was processed using a washed technique. Ripe cherry is first depulped, on the same day of picking. The coffee is fermented in water for 36 hours, before being washed and laid on patios to dry in the sun for four days.

TRACEABILITY

Sourced by Primavera, who works with over 200 local producers in Guatemala, as well as owning a farm. They mill, bag and export all their coffees through their sister company, La Central de Cafe. This is our second time buying coffee from Andres through Primavera, previously purchasing his coffee in 2020.
