PROCESSING

The cherry is firstly hand sorted and then floated, where under ripe or damaged cherry is removed. The cherry is then transported to raised beds, being dried for on average 41 days. The cherry is regularly turned to ensure even airflow and sun contact, and to prevent the occurrence of defects.

TRACEABILITY

This lot was sourced through Raw Material; a social enterprise where 100% of the profit they generate goes to producers. Raw Material work with the Muraho Trading Co. in Rwanda, to help affliate co-operatives increase quality and fetch higher prices. Cyesha CWS is Muraho Trading Co's newest washing station.
