PROCESSING

All coffees from the Aruco Cooperative are processed at their centralised community mill. The mill sits at a lower altitude, allowing for greater control over the drying process. This lot is a 48 hour macerated natural, whole cherries were fermented in sealed bags before undergoing the drying stage. Whole cherries are placed on raised beds. Drying takes between 20 - 30 days, weather dependent.

TRACEABILITY

Sourced in conjunction with Falcon Specialty and their work through the Aruco Micro-lot Program. The program started in 2016 with 25 smallholders, aiming to produce high-quality micro-lots and support members with training and funding. In 2021, the project worked with over 200 producers, having recently built a new milling plant solely for these micro-lots.
