Once the cherry is delivered, the coffee is pulped and put through a 'Kenya Wash'; an initial 16-20hr fermentation is followed by careful washing and sorting by weight before a second fermentation of 24hr takes place. The coffee is transferred to African drying beds, where they are dried in thin layers over a 7-15 day period.
Sourced through Kamba Coffee. This is Kamba's first coffee from Kenya, having previously only sourced from Brazil and Ethiopia. For this, they partnered with Paras and Sanjeev Shah of Diamond Coffee Co., who have been partnering with cooperatives and producers since 1990.
