PROCESSING

After delivery to the Fugi W.S., the cherry is hand sorted and floated to check for density. The cherry is pulped, before being dry fermented for 12 hours. Parchment is soaked for 8 hours in clean water. The coffee is fully washed before being dried on raised drying beds for 33 to 40 days.

TRACEABILITY

Sourced through Sucafina, which co-partners with Baho Coffee in Rwanda. Baho Coffee was formed in 2013 by Rusatira Emmanual. Baho purchased Fugi W.S. in 2016, and offers a number of educational, financial and agriculture services to farmers, alongside social programs for marginalised groups.
