PROCESSING

This lot was processed using a traditional washed technique, with an added extended fermentation. Cherry is pulped, before being fermented in tanks. This fermentation time has been deliberately prolonged to create greater levels of fermentation. The parchment is then washed, before being sun-dried in either a solar tent or on a roof for 20 days.

Sourced through Caravela Coffee, who started in 2000, aiming to source coffee from producers in South and Central America.
