PROCESSING

The relatively flat land of the area makes the perfect conditions for producing naturally processed coffees. Whole cherries are dried on African raised drying beds in thin layers. The total drying time takes around 21 days.

TRACEABILITY

This lot was sourced through Raw Material. In Burundi, Raw Material partner with Matraco and their washing stations to help affiliate co-operatives increase quality and fetch higher prices. Matraco pays producers a premium of ~20% above the local market rate, with station staff members receiving almost 60% above the rate for casual labour in Burundi.
