Paola Trujillo

Patio Bonito is a small 11-hectare, family-run farm in Caldono, a municipality in eastern Colombia. The farm is operated by the Trujillo family. Paola Trujillo, who previously studied chemical engineering, now focuses on the pre- and post-harvesting techniques of the farm. She has taken over from her father Carlos, who has been working on the farm for over 40 years. The Trujillos grow a wide range of coffee varieties on the farm, including rare ones like Geisha and Wush Wush, as well as traditional ones like Typica; which makes up this lot.

PROCESSING

This lot from Paola was subjected to a two-stage extended fermentation before undergoing a washed process. Cherry is first exposed to a dry, aerobic fermentation for 24 hours before being sealed inside Grainpro bags for 50 hours, with a temperature below 22C. After this, the coffee is pulped, gently washed and dried on raised beds.

TRACEABILITY

Sourced through Cofinet, a family business of multigenerational Colombian coffee producers. Cofinet started sourcing and exporting specialty coffee in 2015. Now, they represent and support a large number of Colombian producers, as well as exporting coffee from their own farm and processing centre, La Pradera.
