PROCESSING

This lot was processed using a traditional washed technique. Cherry is pulped, before being fermented in tanks. After washing, wet parchment drip-dries on screens. Hand sorting then takes place, before the cherry is dried on raised beds.

TRACEABILITY

Sourced in conjunction with Omwani Coffee Company. Founded in 2018, Omwani work in East Africa. Within Burundi, Omwani partners with Migoti Coffee Company, which built the Migoti Hill washing station in 2016 to service the surrounding communities. The station employs 10 permanent staff, and an extra 250 seasonal workers during the harvest.
