Cocktail #2 : 'Pumpkin Spice Latte'
Makes 3-5 cocktails (50-75ml each)
Ingredients:
50ml Pumpkin Syrup (recipe below, or use a ready-made syrup)
50ml Vodka
50ml Espresso
100ml Your choice of milk
1.5g Lactic Acid
0.2g Saline (Mix 1 part salt to 5 parts water)
Step 1: Make the pumpkin syrup
Combine the following ingredients and simmer over medium heat for 5-10 mins until sugar is dissolved and the mix is syrupy. Pass through a mesh strainer and leave to cool.
Syrup ingredients:
250g Golden Caster Sugar or Light Brown Soft Sugar
2 tbsp Pumpkin Puree
125ml Water
1 tsp Ground Cinnamon
1 tsp Ground Ginger
½ tsp Ground Cloves
½ tsp Ground Nutmeg
Step 2: Mix all the cocktail ingredients together except the milk
Mix the syrup, vodka, saline and lactic acid together thoroughly in a large jug.
Step 3: Add to the milk
Pour your cocktail mix into the milk, and leave it to sit for 30 minutes to curdle.
Step 4: Filter
Filter the mixture through a coffee filter or muslin cloth. This can take a bit of patience, but it will remove solids and curds from the mix, leaving you with a delicious spiced cocktail.
SERVE CHILLED, IN A SHORT GLASS OVER ICE
Modifications: If you don’t have an espresso machine at home, you can use a strong brewed coffee like AeroPress or Moka Pot. Feel free to substitute the vodka for another spirit like white or spiced rum. Plus, you can use pretty much any kind of milk! For a vegan version, we used Alpro Barista Coconut.
