This lot comes from La Piragua, a farm located in Palestina, Huila, Colombia, sitting at 1,600–1,800 masl. It is run by Arley Vargas, who works alongside his father, Alexander Vargas, as part of the family business. Arley has inherited Alexander’s passion for high-quality coffee, and the family is deeply committed to sustainable production, incorporating regenerative practices across the farm.
PROCESSING
This is a naturally processed Striped Red Bourbon. A naturally occurring variant of the Bourbon variety, recognised by its vivid red colour with orange stripes. Arley uses Brix measurements to ensure cherries are harvested at peak ripeness. Processing involves a double fermentation method: first, a 72-hour oxidised fermentation, followed by a 90-hour anaerobic fermentation in sealed barrels with degassing valves. Drying takes place exclusively in controlled dryer sheds for 15 to 20 days to ensure uniformity and consistency.
TRACEABILITY
This coffee was sourced by Primavera, a green coffee company that works primarily in Guatemala and also manages its own farm. In 2023, they expanded their operations into new origins, including Colombia, bringing in more coffees that reflect their core values of sustainability and exceptional quality.
