Catarina is a first-generation coffee grower in Aldea Com, Huehuetenango, Guatemala. Alongside her husband, she started small with a few parcels of land. Over time, they expanded their farm to 4.3 hectares. Finca Gomez sits at an altitude of 1500–1600 masl. Their coffee is handpicked and processed on-site.
PROCESSING
Hand-harvested cherries are depulped, the coffee is sent to ferment for 22-24 hours with no additional water added. The coffee is then sun-dried for about four days, turned frequently to ensure even drying.
