Christmas Coffee
Colombia
Dried Orange Slices / Marzipan Fruits / Black Forest Gateau
story
This coffee is produced by 50 smallholders in the towns of San Juan de la China, Anzoátegui, and Santa Isabel, Colombia -grown at 1,400–2,000 masl under the shade of banana and walnut trees. Producers benefit from Tolima’s ideal high-altitude climate, each owning about 3 hectares of farmland. Working with the cooperative Cafisur, founded in 1966 and boasting 4000 members, producers receive agronomy and education support.
Primavera’s transparent pricing structure ensures that farmers receive fair compensation for their coffee. Their team of agronomists supports producers with training on maintaining healthy soils, managing shade, pruning and naturally controlling coffee pests and diseases - focusing on encouraging sustainable practices, long-term relationships with farmers.
PROCESSING
This lot was processed using a washed technique. Harvested cherry is floated and hand-sorted to remove defects. Sorted cherry is pulped and fermented briefly for 12 hours. Parchment is dried on drying beds for around 15 days.
TRACEABILITY
This coffee was sourced by Primavera, a green coffee company that works primarily in Guatemala and also manages its own farm.
