Daniel Monge

Finca Las Palomas sits at 1800masl in the Tarbaca district of central Costa Rica. Finca Las Palomas has been in the Monge Garcia family since 1990 when Jorge Monge purchased it. Today it is run by his son Daniel, who carries on the family tradition as a third-generation coffee worker, aiming to improve production and quality year on year.

PROCESSING

Whilst grown at Las Palomas, this lot was processed at the Roble Negro micromill in Aserri. This micromill was set up to help small coffee growers to produce quality, traceable lots and reach the international market. Harvested coffee is sorted via flotation, pulped and then fermented in tanks for 36-40 hours. The coffee is washed to remove any remaining mucilage before being dried on raised beds.

TRACEABILITY

Sourced through Ally Coffee. Beginning in 2013 in Brazil, Ally has expanded to source from multiple origins. Ally sourced this lot from Daniel Monge.
