story
Ebert Huaman produces this coffee in the village of Salinas, located in the San Jose De Lourdes District of Ignacio Province. Through competing in both regional competitions and the 2023 Cup of Excellence, Ebert Huaman has gained renown for his expertise and exceptional quality.
Ebert and his family operate under the name Finca Artemira, named after Ebert’s mother. They are deeply committed to sustainable farming practices. Investing in agroforestry systems, soil regeneration, and increasing biodiversity. The family has been in operation for over 40 years, and Ebert began working with importer Khipu Coffee in 2022.
PROCESSING
This lot is a Washed, Anaerobic, Double Fermention. Cherries are first soaked in tanks, then sealed in GrainPro bags for 24 hours of fermentation. Then undergoing a further 36 hours of fermentation post-pulping, after which the remaining mucilage is washed, removed and the coffee is dried in a solar dyrer for 12-21 days.TRACEABILITY
Sourced through Khipu Coffee, a family-owned business that aims to share Peruvian coffee with roasters. Khipu first was introduced to Ebert Huaman in 2022 through a mutual friend who worked for Puku Puku, a specialty coffee chain in Peru. Later that year, Khipu visited Ebert and his family at their farm, and then again in 2023 where Ebert was awarded 18th place at the Cup of Excellence awards.
