Juan Rodriguez

Wiwitz comes from the producer Juan Rodriguez, who, along with his wife, owns a small 1.1-hectare farm in Aldea Xayomblaj, western Guatemala. Their parents taught the couple the basic principles of coffee production. Subsequently, they decided to purchase land and start their farm. Everything on the farm was built from the ground up by the couple, with the majority of the work being done by Juan himself.

PROCESSING

Cherry is de-pulped the same day it is harvested. An initial wet fermentation of about 24-32 hours is implemented, followed by a second soaking in clean water for 12 hours. Parchment is dried on a patio, taking around 3 days.

TRACEABILITY

Sourced by Primavera, who work with over 200 local producers in Guatemala, as well as having their own farm. They mill, bag and export all their coffees through their sister company, La Central de Cafe.
