Los Ardos

Since 2000, Mario Gomez has owned the Los Volcancitos farm, situated in the Los Arados community in Mozonte, Nicaragua. This 3-hectare farm sits at 1,750 meters altitude and employs over 40 seasonal workers, including 19 women from Mozonte, along with eight permanent staff members.

PROCESSING

After selection, the cherries are floated and depulped, then fermented for 24 to 36 hours before being washed with clean water. At the dry mill, the coffee is dried on African drying beds, then rested for about a month. Finally, the coffee is hulled, classified, and packed in jute sacks and Ecotact bags for export.

TRACEABILITY

Sourced through Falcon Specialty in conjunction with Cafetos de Segovia. Founded in 2015 by sisters Ana and Martha Albir Sotomayor, representing the third generation of a family deeply rooted in coffee farming in Nicaragua with a mission was to process and export high-quality coffee.
