Noé Quito Lazo is a coffee producer from Ihuamaca, in the district and province of San Ignacio, Cajamarca region. His farm El Alto sits at 1,700 - 1,900 masl, adjacent to the Regional Conservation Area, where native forest species such as romerillo help create a microclimate ideal for coffee cultivation.
Inheriting the coffee-growing tradition from his family, Noé maintains practices passed down through generations while progressively improving agronomic and post-harvest management to enhance quality and profitability.
PROCESSING
The coffee is processed using a washing method, incorporating pre-fermentation to allow greater control of the process. Total fermentation takes approximately 48 hours, which helps to highlight the characteristics of the Bourbon variety. Drying is carried out using traditional methods, carefully controlling the rate of moisture loss from the beans.TRACEABILITY
Sourced through Equitorial Traders, a fourth-generation, family-owned specialty green coffee importer based in London. Equitorial has been trading for over 30 years and collaborates with social enterprises such as Well Grounded, which provides training and access to careers in the specialty coffee industry. All Peruvian crops are sourced through their export partner Chacra Café in Jaén, Cajamarca, with whom they have worked for three years. Chacra Café specialises in Peruvian specialty coffee and partners closely with local producers to ensure quality and traceability.
