PROCESSING
Ripe cherries are delivered to the Kyagalanyi wet mill. Due to the long distances between farms and the mill, Kyagalanyi provides free transport for partner farmers. The coffee is floated, pulped, and fermented for 12 hours in large steel tanks, then washed through channels, graded, and dried on raised beds in polytunnels. The beans are turned regularly during drying, which lasts 3–7 days, before being transported to the dry mill for further drying.
TRACEABILITY
Sourced through Mercanta, founded in 1996, a specialty coffee importer supplying roasters worldwide. Mercanta works closely with Kyagalanyi who opened their second washing station in Bogoye, opening the specialty market to smallholders in this region.
