Tejao

In La Mazateca, Oaxaca, between 1,500–1,600 masl, smallholder farmers cultivate coffee under the shade of native trees and fruit crops, following ancestral, chemical-free practices within diverse agroforestry systems. The lot is called “Tejao”, which means “eagle’s nest” in Mazateco and also refers to Huautla, the nearby town where Ensambles runs its main lab.

PROCESSING

Cherry is manually pulped, before being fermented in wooden tanks without water. The coffee is washed before being fully sundried on patios. Smallholders process their coffee themselves and then sell it to Ensambles as parchment.

TRACEABILITY

Sourced through Ensambles, a subsidiary of Ensambles Cafes Mexicanos, a Mexican-owned exporter and cafe. Ensambles works year-round with groups of small-scale coffee growers throughout Mexico, providing field training and support from field technicians and coordinators.
