In La Mazateca, Oaxaca, between 1,500–1,600 masl, smallholder farmers cultivate coffee under the shade of native trees and fruit crops, following ancestral, chemical-free practices within diverse agroforestry systems. The lot is called “Tejao”, which means “eagle’s nest” in Mazateco and also refers to Huautla, the nearby town where Ensambles runs its main lab.
