This coffee is processed using an anaerobic fermentation technique. After pulping, the coffee undergoes 48 hours of controlled fermentation before being carefully dried and sorted on large patios. Beatriz Aparecida de Souza Guimarães
Beatriz owns Fazenda Lavrinha, a 160-hectare farm near Serra do Salitre in Minas Gerais. She descends from a long line of coffee producers, inheriting and innovating on their knowledge and techniques.
A member of EXPOCACCER (Cooperativa dos Cafeicultores do Cerrado), she benefits from certification, support, and tools that help improve quality, infrastructure and sustainable practice.
Beatriz was a finalist in the Doce (sweet) Cerrado category at the 2025 Expocacer Champions and has previously scored highly in the Treasures of EXPOCACCER competitions
