Chelazos refers to the people who live in Chalatenango, a northern district of El Salvador bordering Honduras. Around 25 producers contribute to the Los Chelazos lot, many of whom have worked with Caravela for over a decade. Their farms; located at elevations between 1,200 and 1,800 masl, share similar agro-climatic conditions that favor traditional coffee varieties and contribute to excellent cup quality.
PROCESSING
This lot was honey processed. Ripe cherries are floated, fermented in cherry for 12 hours, then pulped and dried. Drying methods vary: some producers use courtyards for 7–12 days, while others dry on raised beds for 12–22 days.TRACEABILITY
Sourced through Caravela Coffee, which began building relationships with producers in Chalatenango in 2012. In 2015, they established a buying station and cupping lab in La Palma, strengthening connections with growers and supporting the delivery of consistently high-quality community lots.
