story
This coffee comes from second-generation farmer Pedro Pastor in Curarén, Francisco Morazán - found 1350 - 1600 masl. in southern Honduras. Curarén is located within the Mesoamerican Dry Corridor, making growing coffee here challenging due to prolonged dry spells and increasing climate variability. Local farmers have adapted to these challenges with efforts to conserve water, protect soil and maintain productivity. Coffee is grown alongside native vegetation and shade trees, integrated amongst the coffee farms to increase biodiversity and the ecosystem's health.
PROCESSING
This lot was processed using a traditional washed technique. Cherry is handpicked, floated to sort by density and then depulped before being dry fermented for 16 - 18 hours. The coffee is fully washed before being dried on patios and raised beds for 8 - 15 days, depending on the weather.TRACEABILITY
We sourced this coffee through Covoya, a green coffee trader whose mission is to create a greater positive impact on the livelihoods of coffee growers by building long-term relationships and paying higher prices to farmers.
