story
This lot is the result of an collaboration between 5 producers from Jinotega, Nueva Segovia. Grown at elevations between 1,100 and 1,5000 masl. These farmers introduced the Java variety across farms ranging from 10 to 25 hectares. This variety is favoured for its exceptional cup quality, natural resistance to coffee leaf rust, and low fertilizer requirements. However, these advantages come with a trade-off, as Java typically produces lower yields compared to other varieties. The coffee benefits from a diverse agroforestry system, with shade provided by various species including Inga, Musaceae (banana family), forest trees, and pine.
PROCESSING
This is a washed process coffee. Cherries are picked when fully ripe, special attention is required here as the Java variety is prone to dropping. Coffee Cherry undergoes an aerobic fermentation for 12-24 hours, then washed. Washed coffee is then sent to the La Concordia dry mill in Jinotega, which is managed by Caravela, where the coffee is dryed for 12-15 days on raised beds.TRACEABILITY
Sourced through Caravela Coffee, which aims to source outstanding coffee from small producers in Latin America. Each year they train more than 2000 coffee producers through their grower education program, PECA. This provides education and support on best practices to increase productivity and quality.
